We drooled over this Vanilla Donut Cake when it first appeared on IBT at this pretty bridal shower, so we couldn’t help but find out how to make it! Vicki from Pretty Sweet whipped up the decadent cake topped with our favorite treat to create one fabulous dessert and is sharing how you can do the same:
Cake
Ingredients
2 cups cake flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup sugar
150g butter, melted
½ cup milk
3 eggs
1 tsp vanilla
1/2 cup sour cream
Directions
- Preheat oven to 350 F
- Mix together flour, baking powder, and salt in a medium bowl. Set aside.
- In a mixing bowl with a paddle attachment, mix together melted butter, sugar, milk, eggs, vanilla, and sour cream.
- Add flour mixture to wet ingredients and a mix for 2 minutes on medium speed.
- Pour into two greased 6 inch cake pans, baked for 25 minutes or until a toothpick comes out clean. Let cool.
- When fully cooled, ice top of one cake with buttercream icing, place the other cake on top, and ice the top and sides of cake.
- Top with mini donuts!
Buttercream Icing
Ingredients
1 lb unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla
Directions:
- In a mixing bowl, whip the softened butter until light and fluffy, add in the powdered sugar and mix on low until combined.
- Once combined, whip on medium for 2-4 minutes – until very light. Add vanilla.
Brown Sugar + Vanilla Bean Baked Donuts
Ingredients
1 cup all-purpose flour
1 tsp baking powder
¼ tsp baking soda
pinch of salt
1 large egg
1/3 cup brown sugar
¼ cup sour cream
¼ cup milk
2 tbsp salted butter, melted
1 vanilla bean (seeds only)
Tools: Mini Donut Pan, Piping bag
Directions
- Preheat oven to 350 F
- In a medium sized bowl, mix together flour, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, whisk together egg, brown sugar, sour cream, milk, melted butter, and the seeds from the vanilla bean.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix as it will make your donuts tough.
- Transfer your batter into a piping bag and pipe into greased mini donut cavities until ¾ full.
- Place in oven and bake for 8 minutes, or until the donuts bounce back when touched. Let cool.
- When cooled, dip donuts in the glaze, add sprinkles, enjoy!
Vanilla Glaze
Igredients
½ cup powdered sugar
½ tsp vanilla extract
2 tbsp milk
Directions
- Mix all ingredients together until smooth, add food coloring if desired
