Summertime is prime time for coming up with new, fresh recipes that are quick and easy, but most importantly- healthy. During these hot summer months, we love to snack on fruit. But, we can also get creative and incorporate them into almost any meal, whether in a salad, as a side, or as a topping.
Another go-to summer favorite is seafood, especially shrimp. Shrimp is a great nutrient-packed protein that’s also a good source of omega-3 fats. It’s best to choose high quality, wild-caught shrimp to ensure that no chemicals or artificial components have been added that take away from the true benefits of shrimp.
So, let’s combine these two summer favorites to make this refreshing Shrimp Salad. This light salad provides numerous benefits due to its hydrating ingredients, energy-providing protein, healthy fats, and antioxidants, plus these elements give us that glowing summer skin we all crave.
Serves: 2
Salad Ingredients:
12-14 cooked wild-caught shrimp
4-6 large handfuls baby arugula
2 cups cubed watermelon
1 mango cubed
1 avocado sliced
Honey lime dressing ingredients:
1 ½ tbsp extra-virgin olive oil
2 tbsp fresh lime juice
1 tsp honey
¼ tsp sea salt
Pinch of black pepper
Directions:
1. Add arugula to large mixing bowl.
2. Mix in the cubed watermelon and mango.
3. Add the sliced avocado and shrimp to the top.
4. In a separate small mixing bowl, combine the olive oil, freshly squeezed lime juice, honey, sea salt and pepper.
5. Whisk dressing ingredients together until mixed well.
6. Drizzle honey lime dressing over the salad and serve.
