Happy National Truffle Day! You may be pinching yourself having not known about one of your favorite food’s national holiday, but don’t be – there’s still time to celebrate :). Our friend Lauren Gores, of You & Lu, whipped up this delicious birthday cake truffle recipe to commemorate the day – what better flavor, right? Dive into your baking cupboard and serve up these yummy truffles for tonight’s dessert – they are basically confetti in your mouth!
Ingredients
½ cup unsalted softened butter
½ cup sugar
1 tsp vanilla extract
1 ½ cups flour
1 cup yellow cake mix
3 Tbsp milk
2 Tbsp sprinkles
Wax paper
16oz white candy melts
Makes 24-30 truffles
Instructions
Beat butter and sugar.
Add vanilla, cake mix, flour, salt and mix.
Add in milk and stir in sprinkles.
Roll dough into one inch balls and place on wax paper cookie sheet
Freeze for 15 minutes.
Dip truffles and place on wax paper and immediately top with sprinkles
Chill for another 5 minutes.
