We’re sharing her vegetable frittata on our lifestyle blog today, packed with fresh produce and flavor. And yes, her delicious creations taste as good as they look!
From Kara, Breakfast in my mind, is the most important part of the day. It’s a meal of purpose, of setting yourself up for success throughout the day, and honoring your body in a way that is mindful and intentional. I love breakfast because it requires me to slow down, say yes to myself, and begin a day with the thought that I am worth nourishing and giving time and space to.
One of my favorite ways to begin a day is breakfast with friends. Meals together are such a time of celebration and connection, and this breakfast frittata is a healthy and satisfying way to begin your day with friends you love. Hosting guests for breakfast can sometimes be daunting, but this easy and nutritious frittata is a simple recipe that will allow you to create a delightful dish, and still fully enjoy your morning with friends.
Aside from their ease in preparation, frittatas are also great because they’re so versatile! I love making mine with kale, squash, tomatoes, and broccoli, but you can use any ingredients you’d like to accommodate any palate and fill you with protein to sustain your day.
Ingredients
8 eggs
1⁄2 cup almond milk (unsweetened)
1⁄2 cup cherry or grape tomatoes
1⁄2 cup chopped broccoli
1⁄2 cup spinach
1⁄2 cup shredded cheese
1⁄2 onion, chopped
2 cloves garlic, chopped
Salt and pepper to taste
Directions
Preheat your oven to 400 degrees.
In a skillet on medium heat, saute your onion, garlic, and olive oil until golden.
In a large bowl, whisk your eggs and almond milk. Stir in your veggies. Add in onion and garlic and stir well. Pour your egg mixture into a baking dish, then sprinkle with your shredded cheese. and place in the oven. Bake for about 25 minutes, or until eggs are set and the top is lightly browned and fluffy.
Cut into 6 pieces and serve warm, seasoning with salt and pepper!
