Quinoa has become our new best food friend. Besides Kelly from Be Well of course! This sesame chicken bowl she whipped up for us on the blog today is easy and delicious and protein packed. Kelly’s recipes have never let us down so we can’t wait to try it, and neither should you!
From Kelly:
Takeout is a food tango of flavors and textures from around the world all boxed up neatly and delivered to you comfortably on your couch. Unfortunately, takeout comes with a sodium sucker punch, corrosive processed oils and sneaky substitutes. As you begin to clean up your lifestyle and cut out the offenders; that old favorite really just guarantees mineral imbalances, swollen eyes, bloat and sleep interruptions. So instead of giving up your favorite foods, try making your favorite Sunday night meal in a clean and healthy way.
Marinade/Sauce: (double for extra sauce)
1/4 cup rice vinegar
2 tbsp reduced-sodium tamari
3 tbsp fresh squeezed orange juice
1 tbsp toasted sesame oil or 2 tbsp sesame oil
1 tbsp honey
1 tsp fresh ginger, finely grated
1 tbsp sesame seeds
Bowl:
1 cup chopped chicken
2 cup steamed quinoa
1/4 cup shredded carrots
1/4 cup shredded cabbage
1/4 cup bean sprouts
2 tbsp chopped green onion
2 tbsp chopped cilantro
2 tbsp cashews
1/4 sliced lime
Whisk together all ingredients of the marinade in a medium bowl, pour half in a small bowl for sauce.
Submerge chicken in the medium bowl marinade and refrigerate for at least 1 hour.
Use a grill pan or BBQ to cook chicken completely and chop.
Layer all bowl ingredients, top with chicken and serve with sauce.
Definitely need to try this! I’m not the biggest fan of quinoa but I think mixed with everything else it would be delicious 🙂
