Apple Cider Cupcakes with Spiced Cream Cheese Frosting
These cupcakes just scream Fall! They are moist, fluffy and have the perfect apple cider flavor. To complement the spices in the cider, I added cinnamon and nutmeg to a simple cream cheese frosting.
Ingredients, Makes 14 cupcakes
For the cupcakes:
1 ¾ cups all-purpose flour
½ cup granulated sugar
½ cup brown sugar
1 tsp. Baking powder
½ tsp. Baking soda
¼ tsp. Salt
1 tsp. Apple pie spice
¾ cup apple cider
1 egg
2 Tbsp. canola oil
1 tsp. Pure vanilla extract
For the frosting:
4 oz. cream cheese, room temperature
¼ cup unsalted butter, room temperature
1 ½ cups powdered sugar
½ tsp. Pure vanilla extract
¼ tsp. Ground cinnamon
⅛ tsp. Ground nutmeg
Pinch of salt
Directions
For the cupcakes:
1. Preheat oven to 350F and line muffin tin with paper liners.
2. In a large mixing bowl or the bowl of a standing mixer, whisk together the flour, sugar, brown sugar, baking powder, baking soda, salt and apple pie spice.
3. In a separate bowl, stir apple cider, egg, canola oil and vanilla extract until combined. Gradually add to dry ingredients and mix on low to medium speed until smooth.
4. Fill cupcake liners halfway full and bake for 15 minutes, until a toothpick inserted into the middle comes out clean. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
For the frosting:
1. In the bowl of a standing mixer fitted with the paddle attachment (or in a large bowl using a handheld mixer), beat cream cheese and butter on high speed until smooth and creamy.
2. Add powdered sugar, vanilla, cinnamon, nutmeg and salt. Mix on low speed until combined, then turn up to high speed and beat for 1 – 2 more minutes. You can add more powdered sugar if you want the frosting to be thicker.
3. Transfer to piping bag fitted with desired attachment to decorate. Enjoy!
